FRIED GREEN TOMATOES

• Green tomatoes (they should be firm, and feel heavy in your hand)

• Salt

• Black pepper

• 1 egg

• 1 1/2 cups buttermilk

• 1 1/3 cup all-purpose flour

• 2/3 cup yellow cornmeal

• Canola (or peanut) oil

DIRECTIONS: Slice tomatoes about 1/3 inch thick. Mix together the flour and cornmeal. Salt and pepper the tomatoes and then coat them with the flour mixture. Combine the egg and buttermilk in a large bowl. Dredge coated tomatoes, then coat in flour mixture again. Begin frying process until golden brown on both sides, then put them on some paper towels to drain off excess oil.
