After months of hard work and preparation, Lendoria Johnson, owner of Vitatlity Health Foods in downtown Cheraw, will soon have copies of her cookbook available for sale.
“My Favorite Healthy Recipes,” printed by Morris Press Cookbooks of Kearney, Nebraska, will be available to the public on Saturday. The cost is $14.95 and copies will be available for purchase at the store.
The cookbook contains recipes that Johnson and her family and friends have prepared over many years. There are options for everyone, including vegetarian and gluten-free recipes.
There are also kosher cooking tips and helpful hints intended to make cooking a pleasure. The cookbook includes everything from appetizers to desserts.

Below is one of the recipes included in the book.
VEGETABLE AND BROWN RICE STIR FRY
• 5 cups Basmati brown rice (cooked and cooled)
• 5 T olive oil
• 2 medium carrots, grated
• 1 large white onion, finely chopped
• ¼ cup red bell pepper
• ¼ cup green bell pepper
• ¼ cup celery, finely chopped
• 2 cloves garlic, minced
• ¼ tsp garlic powder
• ¼ cup scallions, thinly sliced, white and green
• ½ small zucchini, grated then chopped fine
• Chopped parsley to garnish (optional)
• Salt and pepper to taste
DIRECTIONS: In an extra-large skillet or wok, heat oil over medium-high heat. Add carrots first, then onions and bell peppers. After a few minutes add celery, scallions and zucchini, then the garlic. Finally add the cold rice, garlic powder, salt and pepper. Serve hot and garnished with parsley if desired.
