On Twitter JesterPatches shares a series of images that seem to refer to this post. The data miner found about 128 images showing different non-playable characters.
The pictures of the bosses don’t seem to be there, perhaps to keep the number hidden for novice players. It’s unknown why FromSoftware cut the feature out of the game, but it may have been due to time constraints.
Looking at the game files, I came across some code that made me believe an animal was planned at some point.
